USI purchased venison from you, for the first time, last year. I prepared this venison **** with wild rice for a dinner party. The **** was seasoned simply with kosher salt and freshly ground black pepper. It was cooked sous vide at 131F for 3 hours. After cutting it into portions, each **** portion was seared on top and bottom in a ripping hot cast iron skillet before being plated. The meat was tender and delicious. Recently, I bought some more venison from you because you provide delicious, tender meat at a fair price.
