Wagyu brisket

Overall brisket was awesome. The only thing that I can say is the flat side was very thin and hard to keep it from drying out.

It’s real!

This was as good as you think it will be. Slightly different cut , but basically the same standard brisket we’re all used to

40-hour brisket!!

Best brisket I’ve ever made. Coffee-ancho rub. Smoked at low temp for just 2 hours, to get some flavor. Sous vide for 36 hours with extra tallow. Finish on moderate-temp smoke and rest. The quality of the beef itself was phenomenal…it made me feel that whatever I did to cook it was going to work because the starting point was so good. 5+ stars!
